6 cups of chopped carrots
3 Tablespoons of coconut oil
2 Tablespoons of chopped onions
2 large garlic cloves mashed or finely diced
2 Teaspoons (or more to taste) Chili powder
½ Teaspoon Cumin powder
½ Teaspoon Salt
½ Teaspoon Paprika
1.Clean and cut the carrots into sizes that can be placed in your food processor or blender.
2. Chop the carrots in a food processor or blender. You will notice this fabulous size andtexture very closely simulates that of ground beef, making it a highly attractive and satisfying substitution.
3. Pre-heat your skillet with coconut oil, add the finely chopped onions and let them cook just a few minutes before adding the carrots. Turn and stir the carrots frequently as they cook and add the seasonings and garlic. Cook until just tender. For the right consistency you want them right in the middle. Not too firm and not too soft.
